Una volta cotta, frullarla fino ad ottenere un composto liscio ed omogeneo.<\/p>\n<p>Pronto il pane, metterlo in una boule nella quale aggiungere il cotechino, l\u2019uovo e il parmigiano e iniziare ad impastare a mano. Quando il composto sar\u00e0 pronto e gli ingredienti ben incorporati procedere alla creazione delle polpette. Passare quindi le polpette nel pan grattato. Una volta impanate, friggerle e servire in un piatto adagiandole sulla vellutata di cipolla preparata in precedenza.
