Acetosella<\/p>\n<p><strong>PROCEDIMENTO<\/strong><\/p>\n<p>Dopo aver tagliato lo speck a dadi, con l\u2019aiuto di uno stampino da 5 cm aperto da ambo i lati, formare un cilindro di 2 cm e far riposare in frigo.<br \/>\nPortare a bollore il succo e la iota mescolata. Coprire lo speck chiudendo lo stampino e mettere in frigo a solidificare.<br \/>\nTagliare le mele ricavandone delle piccole mezzelune sottili sottili con cui foderare il tortino avvolgendo il tutto a ventaglio. Lasciare riposare ancora in frigo. Montare la crema con il mascarpone e il rafano; frullare il cetriolo e passarlo a setaccio formando una granella, da congelare per la granita.<br \/>\nAdagiare la crema sul fondo del piatto, appoggiare il tortino, le foglie di acetosella e la granita.<br \/>\nAll\u2019occorrenza con lo scarto dei succhi si potrebbe fare un caviale di decorazione dando cos\u00ec un ulteriore accenno di
