Giustina, 9, Arcugnano (VI)<\/h5>\n<p><strong>INGREDIENTI<\/strong><\/p>\n<p>150 g di culatello<br \/>\n1 patata divisa in 2 e coppata<br \/>\n6 ciliegie sotto spirito<br \/>\n150 g di creme fraiche<br \/>\n10 g di erba cipollina<br \/>\n4 g di zeste di lime<br \/>\n20 ciliegie fresche<br \/>\nSale e pepe s.q<br \/>\nErbette e fiori aciduli per guarnire<\/p>\n<p><strong>PROCEDIMENTO<\/strong><\/p>\n<p><strong>Per la salsa:<\/strong> denocciolare 20 ciliegie, cuocere a bassa temperatura su un tegamino finch\u00e9 ben macerate, se serve aggiungere del brodo di verdure poi frullare e ridurre, quindi condire con sale e pepe.<br \/>\n<strong>Per le ciliegie sotto spirito:<\/strong> sbollentare 200 ml di acqua e 100 g di zucchero.<br \/>\nFuori dal fuoco aggiungere 200ml di alcol da liquore, mettere in sottovuoto le ciliegie coperte dallo sciroppo.<br \/>\nBollire le patate, copparle, friggerle e passarle in forno per 5 minuti.<br \/>\nMontare con le fruste le creme fraiche aggiungere l\u2019erba cipollina e le zeste di limone.<br \/>\nAffettare il culatello.<\/p>\n<p><strong>Ciliegie sotto spirito<\/strong><\/p>\n<p><strong>INGREDIENTI<\/strong><\/p>\n<p>500gr ciliegie<br \/>\n250 ml di alcool per liquori<br \/>\n100 ml di acqua<br \/>\n1 baccello di vaniglia<\/p>\n<p><strong>PROCEDIMENTO<\/strong><\/p>\n<p>Lavare bene le ciliegie, asciugatele e bucatele con un ago.<br \/>\nMettere in una pentola acqua e zucchero, mescolare ed accendere il fuoco, fare bollire per qualche minuto fino a che inizia ad addensarsi.<br \/>\nFare raffreddare completamente lo sciroppo ed unire l\u2019alcool mescolando.<br \/>\nMettere le ciliegie nei vasetti schiacciandole delicatamente per averle vicine una all\u2019altra, mettere 1\/2 stecca di vaniglia per ciascun barattolo<br \/>\nVersare lo sciroppo d\u2019alcol fino a coprire le ciliegie.<br \/>\nChiudere i vasetti e conservarli per un 1 mese in dispensa lontani da fonti di calore<\/p>\n<p><strong>IMPIATTAMENTO<\/strong><\/p>\n<p>Disporre nella base del piatto la nostra patata in 3 cotture, versare sopra le creme fraiche e disporre le fettine di culatello arrotolate.
